    Default Smoked Stuffed Pork Chops

I've never smoked a pork chop and was craving a stuffed pork chop so I decided to combine the 2. I started with a tube of Jimmy Dean sage sausage and a box of Stove Top Pork Stuffing.

I smoked at 230 degrees for about an hour and a half. Internal temperature reached 150 before I caught it but it was still moist and tender. Next time I'll try to pull a little earlier, like 145.

Seeing as how this was my first time with these, they turned out great!

Got the hankering for some more smoked pork chops so I mixed up some stuffing with extra spicy sausage. I smoked until I hit an internal temp of 145 and let rest wrapped in foil. For thos of you that didn't get the motivation the last time we discussed these, ya gotta do it.
