    Default smoking salmon

    What are your favorite ways to smoke salmon. Do you have a special recipe for brine or do you even use it. Wood chunks to smoke with, do you prefer alder,hickory,apple,cherry? I just purchased a smoker and would like to know diffrent ways to use it.

    I pretty much smoke every koke i catch and have not experimented too much because i am always in a hurry and they taste excellent without much effort. I use alder chips and soak them in a simple water/sugar/salt brine. 1 thing i have found is that the little kokes are alot easier to consistenly smoke. So when i go up to the gorge i try to keep the smaller ones to eat and take a picture of the bigger ones. Or the kokes from causey, or porqupine work excellent. Not too much helpful info but this is my opinion.
