whats your favorite deep fry batter? I have a bunch of perch that I want to batter up and I want to try something new. Looking for a light and crispy made from scratch batter. Maybe it has a can a beer and good shot of creole seasoning or some garlic and lemon pepper but it has to be scratch and easy.

50/50 beer and bisquick + seasonings. Dredge the fish in flour or cornstarch first so that the batter sticks. For some extra crunch, sprinkle some panko crumbs on.

I like a 1, 2, 3 beer batter we always used on halibut in Alaska. 1 can of beer, 2 cups of krusteaz pancake mix and 3 eggs. If you whip the eggs whites stiff and then fold the rest of it in it makes a very light batter. Add seasoning to your taste - pepper, cajun, garlic what ever. Works best if the beer is pretty flat, but I usually forget to pour it early.
