As WH2 reported, he and I went to Porcupine for some kokanee action. We boated 18 between us - the limit on THAT reservoir is 12 apiece - and he took 6 home for dinner. The rest (12) went home with me for an extended stay in the smoker. Just thought y'all might like to see the results.

Here they are waiting for thier brine bath.

At the end of the extended stay they were all nicely browned and ready to join the feast.

Its a Bradley Digital, 4-rack stainless with an Auber PID Temperature Controller. It does a wonderful job on everything - fish, waterfowl, venison, beef, pork, etc.

Just noticed your post Bob, looks like your kokes turned out good. Don't worry about saving any kokes I got my own now. By the way, where did you buy that rack and container that you use to bine your fish in?

No secret at all. I had a long day yesterday starting way too early for some trout hunting to fill that tub back up. I also had some comments for Curtis that wouldn't be of interest to anybody else; therefore, I commented directly to him rather than bore y'all. Thanks for the gentle prod to share with the rest of you.

The rack in the picture is one out of my Bradley smoker. I measured the width and length and then went to Wally World (that would be Wal-Mart for those living in Rio Linda - a little Rush humor there) and looked for a tub that would just allow those dimensions to fit inside with very little left over. I don't remember the EXACT dimensions of the tub, but it measures APPROXIMATELY 17" (L) X 13" (W) X 7" (D). It is a standard size that WW carries and will work if you have a Bradley smoker. If you have another brand smoker, measure the rack in it and go from there.

have you canned any after smoking them? i got a bunch of pint jars to try and can some this summer. i have never even caught a kokanee yet, but hope it will not be to hard to learn.

No, I have not. I just vacuum seal them for long term storage. But I know some folks that do on a regular basis so I know it can be done successfully. Sorry I can't help with the process.
