I always fillet my fish, but saw a picture of the kokes with the heads off and cleaned, is this a better method and do you cook it the same way?

Advantages and disadvantages with both. Fillets lose a little bit more meat. Full bodies won't take grill or smoker flavor as well. For Kokes I plan on canning, I poach full bodies and get near 100% of the meat.
