View Full Version : Kokanee Stuffed Mushrooms

1/2 pint canned kokanee
4 oz. cream cheese
2 cloves minced fresh garlic
1/4 cup chopped red onion
cayenne pepper to taste
1 TBSP Parmesan cheese
12 Large cap mushrooms
Olive oil
Panko Bread Crumbs

Preheat oven to 350°
Mix first 6 ingredients until you have a smooth spread. Wash mushrooms and remove stems. Dry with a paper towel and rub with a light coat of olive oil. Fill mushrooms generously with spread and top with panko bread crumbs. Rub some olive oil on a small cookie sheet and place mushroom on cookie sheet. Bake for 20 - 25 minutes until bread crumbs are golden brown and mushrooms have started to sweat.

I get mine in the refrigerated veggie section at Costco.

That looks great, Iill give it a try with some fresh smoked Kokanee this weekend. It looks way to go to not try.

Man that looks PB Dave. You better get moved in over here so I know I can come get a snack on occasion. We might see Dallas stop by at times too.

Dave and Roger, I know where to get those mushrooms by the case really cheap. I still have Kokanee in the freezer I can smoke up. HMMMM!tongue2

These were very good but I think my favorite is still chorizo sausage stuffed mushrooms. Dallas, what's your supply of good chorizo like?

Bulk or Link. There is a place in Boise that has a slaughter house and makes incredible chorizo. Its made from whole muscle pork ground and the seasoning is fantastic. I have made my own from scratch and I can't touch their quality.

I go for the bulk. The super market in my neighborhood uses the chops and roasts that are close to the end of their sale life to make their chorizo so it is very lean and not greasey. I love it!
