Well by request here is how i cooked up my first wild turkey,
first i skinned and gutted the bird, then i fillet the breasts and meat off the upper legs and broke off the legs at the joint.

I soaked one of the breasts in a honey barbeque sauce with some mixed seasonings(Las Vegas seasoning to be exact i got it from a local butcher and it is good on everything)
I then just barbequed that one breast up and cooked some rice and rolls for the side and it was good as it gets. serves 2-3

I soaked the other breast, meat, and legs in a brine for 12 hours
The brine consisted of
-1/2 cup maple syrup
-1 cup brown sugar
-1 cup non iodized salt
-1 cup brown sugar
I then smoked them with alder wood chips till thouroughlty cooked.I have a little chief smoker so i don't know exact temps, but approximatly 4-5 hours.
I cooked some bacon up and made a smoked turkey/bacon wrap out of them and holy shiz!!!!! the girlfriend made turkey/bacon sandwiches out of them and they were excellent too!! i don't think i have had any wild game taste as good as this turkey.
