    Default Second year of canning kokanee

    This is my second year of canning kokanee. I really like canning my own kokes and salmon.

    Yeah buddy. I put up a bunch of canner loads a year!!!
    Koke on Bagels with Cream Cheese, Koke Melts on English Muffins with Celery, Mayo and Baby Swiss, Koke Balls for Crackers, Kokanee (Think Tuna Fish) Sandwiches and with Crackers Cheese and Pepperoncinis while catching more fish!!!

    I think you get to fish more than I do. I had Kokanee (like tuna) on a bagel yesterday.
    Try putting a little bit of apple juice concentrate in it. like a tablespoon. Just a different flavor.

    My wife has started screaming about the lack of room in the freezer due to too much fish. A plan is set to run a batch or 2 of kokes this weekend. I used the last 3 jars from last years stock on some killer koke patties last week so the cupboard is bare and the freezer is full. Time to reversed that a little.

    I got up early this morning to slice and dice fish for the brine pot. Tomorrow a.m. is smoke and can.

    And here I thought it was a slow koke year. Don't know where all those fish came from. LOL!

    First batch is out of the pressure canner and the next batch is going in. This batch was my Dago Red recipe with peppers, italian seasoning and tomato sauce.
